How To Make The Best Chocolate Cake | Rich, Tasty & Incredibly Simple

Some recipes you return to over and over again, and this chocolate cake is one of them! My friend’s see this cake on their birthdays, my parents have a slice on their birthdays – it’s all around the perfect base for a party cake! You can decorate it any way you choose, but inside it has that unbeatable rich chocolate flavour. Here’s how:

Ingredients

  • 5oz self-raising flour
  • 1oz cocoa powder
  • 6oz caster sugar (there wasn’t any in the supermarket so you’ll see granulated sugar in the photos)
  • 6oz margarine
  • 3 eggs
  • Top Tip: Baking soda is optional, but makes the cake a brownie-like texture (as shown in these photos)

Method

No messing about here, just measure out all of the ingredients into a large bowl. Combine using a hand mixer, or whatever electronic whisk you have. A splash of milk can also be used to loosen up the mixture if it’s too stiff. 

Line two round baking tins with greaseproof paper.

Preheat the oven to 180°/160° Fan.

Spilt the batter evenly between the two tins. I use a scale to be precise because you don’t want one half larger that the other!

Bake for around 18 minutes, or until a skewer comes out clean. Allow to cool on the side completely before decorating.

Decorating is the fun part because you can do it however you like! This particular cake was for a birthday, so I iced with chocolate buttercream before piping on a greeting with melted white chocolate. Here’s my final result:

That splodge of white chocolate is all that was left in the piping bag! So I just made a little ‘chocolate bar’ from it haha 😉

Alexandra’s Questions

What is the fanciest, most exquisite dessert you’ve ever tried? 

Once I was out with friends and we had some really posh macaroons! However I don’t have much of an expensive taste so my expectations aren’t high.

If you could swap your current diet for a specific country/region cuisine for one week, which would you pick? (e.g. Mediterranean, Thai, Chinese, etc.)

The traditional French meals are really lovely! When I went over to France (there’s a travel diary all about it!) I had a really good time trying their foods. My favourites are onion soup, goat’s cheese and baguette dipped in hot chocolate (for breakfast!). Of course croissants are a staple as well.

Breakfast of your choice: espresso and croissant with jam or pancakes with bacon and maple syrup? 

I’d have to choose the first option, as I’m vegetarian! But I am incredibly interested in the bacon and maple syrup combination. Have any of you tried it? 

If you’re hosting a family and/or friends gathering, what dish is an absolute ‘must’ on your dinner table? Would you prepare it yourself or let your guests help? 

Unless it’s Sunday dinner, we usually do pizza for family and friend gatherings. And we do let them choose their own toppings! That’s the fun of making your own. Although we do prepare the dough without guests help, because it needs to be proving way before they arrive.

I’ve been baking from a very young age, and my first ever baked good by myself was Victoria Sponge. However, on the savoury side, I think the first was beans on toast! It’s basic, and that’s exactly why I learnt it so early on.

  1. What are your top girl and boy names?

Grace, Alexandra and Phoebe for a girl then Sam, Tom and Noah for a boy (I know they’re basic, but I just love those names!)

  1. If you could speak, read, and write any language fluently, what language would you choose?

At the moment I’m learning French, and one day I hope to be completely fluent in it. However Spanish would also be good as it is such a widely spoken language!

  1. What are your thoughts on peanut butter?

I love peanut butter, but I rarely have it because of the palm oil in it. As a treat I might buy the sustainable peanut butter but it costs too much to have in a weekly shop! I generally use peanut butter on toast or in baking. Unfortunately I don’t understand the hype of PBNJ. It’s just too chewy for me.

  1. Do you prefer ice cream in a cup or cone?

This quite an interesting one! I used to never eat the cone however now I love it. It’s also better for the planet than having a cup with a plastic spoon. Waffle cones are overpriced but they’re certainly by favourite. What about you?

  1. Favourite meal food?

I’m not sure I entirely understand this question, but I love soup!  It’s a great meal to use up vegetables in the fridge that are almost past it. You can always reheat soup anytime and save it in the freezer for later. I love having soup piping hot with plenty of bread!

Three Things About Me

  1. I’m cat-obsessed and see myself being a crazy cat lady in the future.
  2. One of my ambitions is to travel the world. This summer my family planned to internal around Italy but unfortunately that’s not happening now.
  3. At the moment I’m behind with my Goodreads goal. That’s very unusual for me because I’m normally two books ahead of schedule!

Filter + Fox | Café Review

Friday 21st February 

Today I went to the Filter + Fox cafe, Liverpool, for brunch. I am no food critic but I can certainly tell that the food was amazing in many ways. On the menu were many dishes, but the only vegetarian dish that I could see at first glance was a grilled cheese sandwich. That to you, may not seem extraordinary but it was certainly brilliant. It came with a spoonful of a lovely cafe-made sweet pickle and was served on lovely, toasted brown-seeded bread. Excuse me, but I forgot to take a photograph of the meal. Hah! I was truly very hungry.

For my drink, I had an elderflower and lemon soda. As you can imagine, it was lovely. I had never heard of such thing before, but I realise it makes so much sense to put the two flavours together!
